Sweet & Salty Popcorn Balls with Coconut

Move over rice krispie treats, these marshmallow popcorn balls are just the right mix of sweet and salty. They’re cute Christmas treats as “snowballs” and fun movie night snacks.

This popcorn recipe is just like Rice Krispie treats, but with salty and crunchy popcorn instead. And to make them extra cute, these are rolled into festive snowballs by adding shredded coconut.

They’re super easy to make and would be fun Christmas movie night food ideas. They’d also make a really fun, salty-sweet addition as snowballs on a Christmas cookies tray.

Ingredients

  • 6 cups popped popcorn (remove any unpopped kernels) 
  • 40 regular-sized marshmallows or 4 cups mini marshmallows
  • 1/4 cup unsalted butter 
  • 1/2 teaspoon vanilla extract (optional) 
  • 1 cup shredded sweetened coconut flakes (for rolling)

Steps to make Coconut Popcorn Marshmallow Snowballs

1. Place 6 cups of popped popcorn in a large mixing bowl, making sure to remove any unpopped kernels. 

2. In a large saucepan, melt 1/4 cup of unsalted butter over medium-low heat. Add 40 regular-sized marshmallows to the melted butter, stirring continuously until completely melted and smooth. If desired, stir in 1/2 teaspoon of vanilla extract for added flavor.

3. Pour the melted marshmallow mixture over the popcorn. Using a spatula, gently mix until all the popcorn is evenly coated with the marshmallow mixture.

4. While the mixture is still warm, grease your hands with butter or cooking spray. Take small handfuls of the popcorn mixture and shape them into balls, about the size of a golf ball.

5. Place 1 cup of shredded sweetened coconut flakes in a shallow dish. Roll each popcorn ball in the coconut flakes until fully coated.

6. Place the coated popcorn snowballs on a baking sheet lined with parchment paper. Let them set for about 30 minutes at room temperature until they firm up.
