Amazingly Delicious Oatmeal Creme Pie Bars

If you love classic oatmeal creme pies, you’re going to love these Oatmeal Creme Pie Bars!

They have all the flavors of the nostalgic treat—soft, chewy oatmeal cookie layers sandwiched around a sweet, fluffy creme filling.

But in an easy-to-make bar form! They’re easier to make than the classic pies, simply make a big pan, cut and serve.

They just look so darn irresistible too. These bars are perfect for bake sales, potlucks, or just a fun homemade dessert

Let’s make some bars!

Ingredients

  • 2 ½ sticks of unsalted butter (room temperature)
  • ¾ cup of dark brown sugar 
  • ½ cup of sugar 
  • 1 tsp of vanilla extract
  • 2 eggs
  • 1 ½ cups of flour 
  • 1 tsp of ground cinnamon
  • 1 tsp of salt 
  • 1 tsp baking soda
  • 1 ½ cup of quick oats 
  • 1 ½ old fashioned oats 

Creme Filling

  • 1 ½ sticks of unsalted butter (room temperature)
  • 2 cups of powdered sugar 
  • 13 oz of marshmallow fluff 
  • 1 tsp of vanilla extract

Steps to make Oatmeal Creme Pie Bars

 1. Line two 9×13 baking dishes with parchment paper and spray with nonstick cooking spray, set aside. Don’t skip greasing the parchment!

2. Preheat the oven to 350 degrees.

3. In a large bowl add the 2 ½ sticks of butter, brown sugar and sugar and beat with a hand mixer until light and creamy.

4. Add the 1 tsp vanilla and eggs and beat until mixed completely together.

5. In another large bowl add the flour, cinnamon, salt, baking soda and stir.

6. Add all the mixture to the wet mixture and beat until everything is mixed together. Add the quick oats and old fashioned oats to the bowl and beat again.

7. Scoop half the mixture into one of the lined 9×13 baking dishes and the rest into the other 9×13 and spray your hands with nonstick cooking spray.

TIP: You can use an oiled wooden spoon to spread the mixture instead of your hands.

8. Flatten the dough with your hands, spreading evenly all the way to the corners of the baking dish. Bake for 13 minutes or until golden brown. Let the bars cool while you make the cream

9. In a large bowl add the 1 ½ sticks of butter and beat using the hand mixer until light and creamy.

10. Add the powdered sugar and beat again until mixed together. Add the marshmallow fluff and vanilla and beat again.

Assembling the oatmeal creme bars

11. The bars must be completely cool before spreading the cream on top. Lift one of the bars out of the dish by lifting the parchment paper up and place the parchment paper lined bar on a tray or sheet pan.

TIP: Once the bars have cooled for 10-15 minutes out of the oven you can lift them out of the baking dishes and let them cool on a cooling rack for a faster cooling time.

12. Spread the cream all over top of the oatmeal bar.

13. Lift the other bar out the baking dish by the ends of the parchment paper. Carefully flip that bar on top of the cream and lightly press down.

14. Place in the freezer for 1 hour. Take out and slice into bars, serve and enjoy!

TIP: Store in an airtight container in the fridge for 2-3 days
