Super Easy No-Bake Strawberry Cheesecake

Ingredients

  • 2 cups or 10 oz of crisp cookies or graham crackers of your choice (You can also use pre-made pie crusts but it may be slightly less full depending on the crust size you pick) 
  • ½ cup butter
  • 1 cup powdered sugar
  • 3 packages cream cheese (8 oz each)
  • 1 cup heavy whipping cream 
  • 1 ½ cup of strawberries 
  • 85 g or 3 oz of Strawberry Gelatin

Steps to make strawberry no bake cheesecake

1. Crush the cookies in a plastic bag using a rolling pin until they are finely crushed. You can also do this step in a food processor

2. Melt the butter in a saucepan over low heat and mix in the crushed cookies until well combined.

3. Press the mixture into the bottom of an 8-inch springform pan to form the crust. Refrigerate for about 20 minutes.

4. In a mixing bowl, beat together the powdered sugar, heavy cream, whipping cream, and cream cheese until smooth and creamy.

5. Prepare the Strawberry Gelatin according to package instructions, let it cool, and pour into the batter. Mix until all the ingredients are fully blended.

6. Spread the cheesecake mixture evenly over the cookie crust. Place whole or diced strawberries on top.

6. Refrigerate the cheesecake for at least 4 hours, or until set.
