Fresh & Zesty Lemon Bars
You have to try these fresh, zesty lemon bars. They’re a refreshing dessert that are perfect for summer or as an after dinner treat.

These lemon bars are surprisingly easy too. Other than bake time and cooling time, you simply mix the ingredients and pour.

Steps to make Lemon Bars
1. Preheat the oven to 350F.
2. Combine all the purpose flour, corn flour, salt, powdered sugar and cubes of butter. You can do this in a food processor or by kneading the butter and flour into crumbs with your hands.

3. Cover a 9 x 13 baking dish with foil and place the crumbs in it. Level and make small borders (about 1/2 inch).
4. Bake for 20 minutes in the oven.
5. While the crust bakes, zest two lemons and squeeze out the juice.

6. Mix eggs, zest, lemon juice, sugar, all-purpose flour. Mix the ingredients for the filling thoroughly with a whisk so that there are no lumps of flour.

7. Once the crust has baked, remove it from the oven. Keep the oven on.
8. Pour the filling into the baked crust and place back in the oven.
9. For a softer filling, bake for 20 minutes; for a denser filling, bake for 30 minutes.

10. Remove the finished lemon bars from the oven and let cool for about 2 hours. After two hours, the lemon bars will become denser and easier to cut.

12. Dust the lemon bars with powdered sugar and cut into squares or rectangular pieces.
