Ingredients

  • Cream Cheese Mixture:
  • 6 oz. cream cheese, softened
  • 1/3 cup sugar
  • 1 egg

Muffin Batter:

  • 12/3 cups flour 1 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tbsp. vinegar
  • 1 tbsp. vanilla extract
  • Topping
  • 1/4 cup sugar
  • 1/2 tsp. cinnamon
  • 1/4 cup chopped pecans

Steps to make Cinnamon Pecan Cream Cheese Muffins

1. Preheat your oven to 350°F (175°C). Line 18 muffin cups with paper liners or grease them.

2. In a medium bowl, beat together the cream cheese, 1/3 cup sugar, and egg until smooth and creamy. Set aside.

3. In a large bowl, combine the flour, 1 cup sugar, baking powder, salt, and nutmeg. In another bowl, mix together the water, oil, vinegar, and vanilla extract.

4. Pour the wet ingredients into the dry ingredients and mix until just combined. Continue to mix for about 2 minutes until the batter is smooth.

5. Fill each muffin cup halfway with the muffin batter.

6. Place a tablespoon of the cream cheese mixture on top of the muffin batter in each cup.

7. In a small bowl, mix together the 1/4 cup sugar, cinnamon, and chopped pecans. Sprinkle the topping mixture over the muffins.
