Butterfinger Cookie Bars
If you’re a fan of that crunchy, peanut buttery Butterfinger flavor, you’re going to need to make these Butterfinger cookie bars.
That combo of a chewy cookie base with crushed Butterfingers mixed in, topped with a creamy peanut butter frosting? Total game-changer. I can’t tell you how much I love me some peanut butter frosting and it really carries these bars.
They’re rich, sweet, and have just the right amount of texture from the candy pieces. It’s one of those desserts that feels a little nostalgic and totally worth making whenever you want something fun to share (or keep all to yourself—no judgment). They’d be a home-run for a school bake sale or a kids party dessert.

Steps to make Butterfinger Cookie Bars
1. Preheat the oven to 350°. Line a 9×13 baking dish with parchment paper and spray with cooking spray
TIP: Leave some parchment paper sticking out the sides so you can easily lift it up to cut the finished product into bars
2. In a large bowl, beat together 1 cup of butter, sugar and brown sugar with a hand mixer until it becomes light and creamy.

3. Add in the eggs and vanilla and beat again until mixed together. Add the flour, salt and baking soda and beat again until fully combined.

4. Add in the 1/2 cup of Butterfinger bits and mix once more.

5. Spread batter evenly in lined baking dish. Bake in the oven for 25 minutes or until golden brown. Remove from the oven and let cool completely.
TIP: Oil up your hands to be able to spread the cookie dough around evenly without it sticking.

6. In another large bowl, beat together peanut butter and 1 stick of butter until smooth.

7. Add vanilla and mix again. Beat in the powdered sugar and milk until it becomes smooth and creamy.

8. Spread evenly on top of the cooled cookie layer. Sprinkle the leftover butterfinger bits all over top.
9. Slice into bars before serving. Store in an airtight container in the fridge for 3-4 days.

- 3 tbsp milk
- 1.5 cup of chopped Butterfinger bars (5 fun sized bars)
