Mini Apple Hand Pies

These handheld apple treats pack all the flavor of classic apple pie into a portable, no-fuss dessert. Using store-bought crust keeps things simple, while a mix of Granny Smith and Honeycrisp apples gives you that perfect balance of sweet and tart.

Ingredients:

Apple Mixture:

  • 2 small Granny Smith apples, peeled and chopped
  • 1 Honeycrisp apple, peeled and chopped
  • 3 tablespoons white sugar
  • 1 tablespoon packed brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon butter

Pie Crust:

  • 2 refrigerated pie crusts
  • 1 egg, whisked (for brushing)

For the Sweet Drizzle:

  • 1 cup confectioners’ sugar
  • 1-2 tablespoons milk
  • 1/4 teaspoon vanilla

Steps to make Mini Apple Hand Pies

1. Heat oven to 400°F and line a baking sheet with parchment paper.

2. Melt butter in a medium pan over medium heat. Add chopped apples, both sugars, cinnamon, and lemon juice. Cook 5-7 minutes until apples start to soften. Remove from heat and let cool completely.

3. Unroll pie crusts and cut into 4-5 inch circles using a large cookie cutter or bowl rim.

4. Spoon apple mixture onto half the dough circles. Top each with a second circle and press edges firmly to seal. Use a fork to crimp all around the edges.

5. Brush tops with beaten egg and cut 2 small vents in each pie. Place on prepared baking sheet and bake for 20-25 minutes until golden.

6. As pies cool, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over slightly-cooled pies and let set a few minutes before serving.
