Apple Crisp Bars — a Cozy Fall Treat

These apple crisp bars are everything you love about a classic apple crisp, but in an easy-to-slice bar form. With a buttery shortbread-style crust, cinnamon-sugar apple filling, and a golden oat topping, they hit all the right notes for a cozy fall dessert.

They’re made with simple ingredients you probably already have on hand: fresh apples, brown sugar, oats, and plenty of cinnamon. The crust holds together nicely, making these perfect for serving at gatherings or packing up for fall bake sales and lunches.

This is an apple dessert that taste just as good warm with a scoop of vanilla ice cream as they do straight from the fridge the next day.

Ingredients

Crust:

  • ½ c salted butter, softened
  • ¼ c brown sugar
  • 1 tsp vanilla
  • 1 ¼c flour

Filling:

  • 2 large apples, peeled and sliced thin (about 3 cups)
  • 2 tbsp flour
  • ¼ sugar
  • 1 tbsp cinnamon

Crisp Topping:

  • ½ c brown sugar
  • ¼ c granulated sugar
  • ⅓ c flour
  • 1 tsp cinnamon 
  •  ½ c old fashioned oats
  • 1 stick of butter, room temperature

Steps to make Apple Crisp Bars

1. Preheat oven to 350. Line 8×8 pan with parchment paper.

Crust:

3. Beat butter and brown sugar together for 3 minutes.

4. Add vanilla and flour and mix well.

5. Press the crust into the prepared pan.

Filling:

6. Slice and peel apples.

7. Add flour, ¼ of granulated sugar and cinnamon and toss until the apple slices are coated.

8. Spread this evenly over the prepared crust.

Crisp topping:

9. Mix brown sugar, granulated sugar, flour, oats, cinnamon and butter together until crumbly.

10. Press over the top of the apple layer.

11. Bake at 350 for 45 minutes or until the edges are golden brown and the center is bubbly.

12. Allow to cool.

13. Cut into 16 squares.
