Apple Cider Cookies: A Quintessential Fall Cookie

They’re simple to make, but are packed with that classic spiced apple flavor.
The secret is reducing real apple cider down into a thick concentrate, which adds a rich apple taste without making the dough too wet. The cookies are rolled in cinnamon sugar before baking for that classic spiced coating, and the glaze adds just the right touch of sweetness.
They’re great for a fall bake sale, a Halloween party dessert, or just when you’re craving something cozy and a little different from the usual.

Steps to make apple cider cookies
1. Preheat oven to 350 & line two baking sheets with parchment paper
2. Bring 1 cup of apple cider to a boil over medium heat. Reduce heat by half and allow to simmer for 25 minutes or until the cider has reduced to ¼ cup. Allow to cool
3. With a stand mixer, beat the butter and brown sugar for 2 minutes or until smooth.

4. Add egg, cooled apple cider, and mix until combined.
5. Add flour, spices and baking soda, mix until combined, but don’t overmix!


6. Make cookie coating by combining sugar and cinnamon in a bowl.
7. Scoop the dough. You can use a standard cookie scoop, or to make large cookies, use an ice cream scoop.

8. Roll the dough into balls into the cookie coating.

9. Place the cookies 3” apart on the parchment lined baking sheets.
10. Bake at 350 for 10-12 minutes for smaller cookies or 16-20 minutes for large cookies.

11. Allow the cookies to cool before mixing the glaze. To make the glaze, whisk together powdered sugar, vanilla and 2 tablespoons of apple cider. You can add another tablespoon of cider if needed to thin the glaze.

12. Drizzle glaze on cooled cookies before serving

- ¾ cup of light brown sugar, packed
- 1 egg
- 1 teaspoon of vanilla
- 1 teaspoon of baking soda
- ½ teaspoon of cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon all spice
Cookie coating
- 2 teaspoons of cinnamon
- ¼ cup of sugar
Glaze
- 1 cup of powdered sugar
- ⅔ tablespoons of apple cider
- ½ teaspoon of vanilla
